Open Revenue Consulting, a finalist in the GREEN UK AWARDS for Sustainable Tourism thanks to its "The PLEDGE on Food Waste" program to reduce food waste and its goal of achieving the First Zero Waste Event in Europe

Open Revenue Consulting has been recognized as a finalist in the prestigious Green Awards in the "Excellence in Sustainable Waste Management" category, thanks to its collaboration with Marriott International and the implementation of The PLEDGE on Food Waste program.

In addition to achieving measurable results on a large scale, it has also been recognized for holding the first "Zero Food Waste to Landfill" event in Europe during the Global Revenue Forum Madrid 2025, marking a milestone in sustainability applied to the tourism and events industry.


A strategic alliance for hotel sustainability

In November 2023, Open Revenue Consulting, together with Marriott International, launched a food waste prevention program based on The PLEDGE on Food Waste methodological framework, comprised of 7 pillars and 95 criteria.

The objective: to transform hotel operational management around sustainability, engaging more than 120 Marriott executives through in-person and online training, and creating internal committees to lead the change.

  1. Category Criteria:
  • A food waste policy was adopted and shared with all stakeholders.
  • Employees were trained and awareness raised at multiple touchpoints.
  • Food waste data was collected and analyzed.
  • New SOPs were reinforced and integrated at critical points (storage, forecasting, buffet).
  • Customers were engaged to reduce dish waste.
  • Solutions were explored to divert remaining food waste to prevent it from ending up in landfills.


A zero-food-waste dish was offered on the menu.

 2. Results that drive change

In just six months, the program achieved:


  • A 25% reduction in food waste at participating hotels.

  • A reduction of more than 415,000 kg of CO2 emissions.

  • And, one year later, a total reduction of 51% was achieved, with all hotels certified by external organizations such as SGS UK and Audit Diagnostic Solutions Tourism.


In the words of Joanna Chugh, Regional Vice President of Marriott International for the UK, Ireland and the Nordics:

“Since the beginning of 2024, all 53 Marriott hotels in this region have met the goal of reducing food waste by 50%. The combined efforts of the teams have achieved a 51% reduction in grams of waste per diner.”

3. First “Zero Food Waste” event in Europe (Madrid, Spain)

As a culmination of this initiative, on June 4, 2025, Open Revenue Consulting organized the first zero-food-waste hotel event in Europe: the Global Revenue Forum Madrid.

Thanks to The PLEDGE methodology and collaboration with social and operational entities, the event completely eliminated waste, consolidating a replicable model for organizing sustainable conferences and events in the sector.
